Mixed Berries Variegato

Variegatos are ideal for marbling or streaking ice cream. It's a light sauce with a high percentage of fruit puree that enhances the flavor and adds color to ice cream. It has a higher antifreeze content than ice cream, allowing consumers to enjoy a slightly firmer texture.

Preparation:

  • All the ingredients are weighed.
  • Place the ingredients in a stainless steel pot over medium heat.
  • Once it reaches a boil, reduce to a low heat.
  • Stir gently with a ladle.
  • Boil for 5 minutes
  • Let it cool
  • If you need more acidity, add citric acid.
  • It can be liquefied.
  • Keep refrigerated, covered, for no more than 45 days.

  • Unflavored gelatin 4
  • Citric Acid 3.5
