Variegatos are ideal for marbling or streaking ice cream. It's a light sauce with a high percentage of fruit puree that enhances the flavor and adds color to ice cream. It has a higher antifreeze content than ice cream, allowing consumers to enjoy a slightly firmer texture.
Preparation:
- All the ingredients are weighed.
- Place the ingredients in a stainless steel pot over medium heat.
- Once it reaches a boil, reduce to a low heat.
- Stir gently with a ladle.
- Boil for 5 minutes.
- Let it cool.
- If you need more acidity, add citric acid.
- It can be liquefied.
- Keep refrigerated, covered, for no more than 45 days.
